Keto Enchiladas

Ingredients (5 Servings)

  • 2 Cans 12.5 oz Swanson Canned Chicken

  • Olive Oil/Olive Oil Spray

  • 1 Tbsp Salt

  • 1 Tbsp Black Pepper

  • 1 Tbsp Crushed Red Pepper

  • 2 Tbsp Unsalted Butter for sauteing onions and peppers.

  • 1 Half Yellow Onion (chopped)

  • 1 Green Pepper (chopped)

  • Half Cup Jalapeno Peppers (chopped)

  • 1 Head Cauliflower

  • 1 Cup Sour Cream

  • One 4.5oz Green Chili Peppers

  • 2 Cups Mexican Shredded Cheese

  • 1 Package Enchilada Seasoning



  1. Heat oven to 350 degrees Fahrenheit

  2. Coat 15×10 baking dish with Olive Oil spray

  3. Saute onion, green pepper, chilis, and jalapenos in frying pan with unsalted butter

  4. Mix canned chicken with salt, peppers, and canned chilis.

  5. Mix sauteed vegetables with chicken, and evenly fill in baking dish

  6. Pulse cauliflower in food processor with “S” blade until “rice like” consistency is made.

  7. Place over the top of veggie/chicken mix in dish.

  8. Make enchilada sauce (per packet instructions,) and pour over contents in dish.

  9. Top with cheese and place in oven

  10. Cook for 30 minutes

  11. Slather on Sour Cream, and dish up!
